Malabar Mutton Curry in Kerala Style

Here we are giving instructions to prepare Malabar mutton curry:
The ingredients are:
- 1 kg Mutton/lamb
- 1 cup grated coconut
- Making a paste with 1 tsp red chilli powder and water
- 2 tablespoons fresh ginger garlic paste
- 3 tsp coriander powder
- 1 tbsp turmeric powder
- 3 tsp Paprika
- 1/2 tsp black pepper powder
- 1 teaspoon cumin seeds
- 1/2 tsp fennel seeds
- A 2″ cinnamon stick
- 1 bay leaf
- 5 cloves
- 2 Onions
- Cashew nut paste, 2 tsp
- 2 tomatoes
- A cup of coconut milk
- salt for taste
- Oil – 3 tbsp
- Leaves of curry/coriander

Instructions:
- Grated coconut, ginger-garlic paste, red chilli paste, turmeric, paprika, black pepper, cumin, fennel, cinnamon, bay leaf and cloves should all be ground into a paste before you prepare Malabar Mutton Curry.
- A cooker should be heated with oil.
- Onions should be fried well.
- After adding the spice paste, sprinkle a little water and fry until the spices are roasted.
- Stir well after adding the mutton/lamb.
- Cashew nut paste and chopped tomatoes should be added at this point.
- 2 cups of water and salt should be added.
- The meat should be cooked until it is tender.
- Stir in the coconut milk and simmer for a few minutes.
- Fire should be turned off.
- Coriander leaves or curry leaves can be garnished on Malabar Mutton Curry.
- Reduce the amount of chilli and pepper powder if you want a mild curry.
