Turkish Bulgar Upma /Pot Bulgar Pilaf

A Turkish favorite dish, Dalia Pulao / broken wheat upma / Bulgar Pilaf / made in the instant pot. Veggies, garlic, and spices are added to Bulgar wheat during cooking. We love this rice pulao substitute, which can be cooked in under 30 minutes.

There is a great deal of demand for Bulgar in the wheat-growing regions of North India. Using it as a sweet or savory dish is possible because it is a type of dried cracked wheat. Fiber and protein are higher in Dalia, and its glycemic index is lower. It also contains an abundance of vitamins and minerals. Dishes like this are healthier alternatives to rice pulao.

An instant pot can be used for this quick and easy recipe, but a pressure cooker can be used as well.

Ingredients:

  • 1 cup Broken wheat
  • 1 chopped Onion
  • 2 chopped tomatoes.  
  • 1 Green Chili Pepper 
  • 4 garlic cloves
  • 2 cups Mixed vegetables (bell peppers, green peas, carrots, beans)
  • 1 teaspoon salt
  • 2 ¾ cup Water
  • 1 tablespoon ghee or oil
  • 1 tablespoon lemon juice
  • Cilantro to garnish
  • 1 teaspoon cumin seeds
  • ½ teaspoon turmeric
  • ½ teaspoon red chilli powder
  • 1 teaspoon Coriander powder
  • 10 black peppers

Instructions: 

  • Using the Sauté mode, heat the oil in the instant pot. Whole black pepper, green chillies, and cumin seeds should be added. 
  • Onions should be added after they start spluttering. The onions should be lightly browned after 2-3 minutes of sautéing. 
  • Spices, salt, and tomato should be added. Stir and saute for two minutes. 
  • Mix the vegetables well and add them to the bowl. Mix dahlia and water together. The pot should be deglazed after scraping off anything stuck at the bottom.k at the bottom. Make sure the vent is in the sealed position before closing the lid. 
  • After 5 minutes of high pressure, switch to manual or pressure cook mode in your instant pot. 
  • Allow the pressure to naturally release for 10 minutes after the instant pot beeps. After 10 minutes of NPR, manually release the pressure. Combine one lemon’s juice with cilantro and garnish with lemon slices. Hot raita or yogurt is best served with this dish.
